Here are 2 recipes for coffee cakes that I really like! The first one is an apple cake, and my brother's fave cake, I like to make it in the fall.....it keeps really well....the second is a traditional sour cream coffee cake and I have always had consistently good results with it....

APPLE WALNUT CAKE

4 cups coarsely chopped peeled apples
1 3/4 cup sugar
2 eggs
1/2 cup oil
2 teas vanilla
2 cups flour
2 teas baking soda
1 teas salt
2 teas cinnamon
1/2 cup chopped walnuts

combine aples and sugar. set aside
mix eggs, oils and vanilla, mix well
add combined dry ingredients
alternate with sugar applemixture
stir in walnuts
bake in bundt pan, that has been greased and floured

350 degrees for 45-50 minutes until done, toothpick comes out clean. Do not underbake
drizzle top with lemon glaze

lemon glaze

1 cup confectioners sugar
1 1/2 tblspns lemon juice
1/2 teas vanilla
1 tblspn corn syrup

mix till smooth
spoon on top of cooled cake.



SOUR CREAM COFFEE CAKE

9"x 9" pan, but if you double it it fits well in a bundt pan.

3/4 cup shortening
3/4 cup sugar
2 cups flour
1/2 teas salt
1 teas baking powder
1 teas baking soda
1 cup sour cream
2 eggs
1 teas vanilla

topping:
1/2 cup chopped walnuts
1/2 cup sugar
2 teaspoons cinnamon

cream shortening and sugar together, add dry ingredients and mix. Add the rest of the ingredients. Pour into greased/floured 9x9 inch pan and sprinkle with topping. Bake at 350 degrees for 40-45 minutes or until done....

if you double it, it takes longer to bake, and what I did was after I greased and floured the bundt pan, I put half of the topping in the bottom of the bundt pan, then half way through the batter I put the other half of the topping, I love that layer of topping in between!
